Raspberry "Nice" Cream....YUM!!

I found this recipe from www.wholefoods.com, one of our Positive Power Partners!  I have made it twice now, and trust me, you will not be disappointed!  Purchase "cashew pieces" in bulk as they are cheaper.

  • 6 ounces raspberries, fresh or frozen and thawed
  • 1/2 cup raw whole cashews, soaked in warm water at room temperature for at least 2 hours, drained
  • 2 bananas, peeled, thickly sliced and frozen

Purée raspberries and cashews in a blender or food processor until smooth, adding up to 1/4 cup water if needed to purée. Add bananas and purée again, scraping down the sides often, until very smooth. 

Transfer to a tightly sealed freezer-safe container and freeze until just solid, about 4 hours. (If you make further in advance, let soften at room temperature for 15 minutes before scooping.)

Here in the Land of Mojo, we always talk about getting your 80 - 100 ounces of water in every single day.  Check out this wonderful new recipe from one of our partners, Whole Foods. This infused water takes on the color of the peaches as well as their sweet taste, while ginger adds warmth.

                                                     Peach-Ginger Water with Cilantro

                                                     Peach-Ginger Water with Cilantro

Ingredients: 

  • 4 peaches
  • 1 (2-inch) piece fresh ginger
  • 4 sprigs fresh cilantro

Rinse peaches and peel. Place peel in a large pitcher or bowl. Halve peaches, remove pits and add pits to the pitcher. Reserve remainder of peaches for another use.   

Rinse ginger, peel and add peel to the pitcher. Reserve remainder of ginger for another use. Rinse cilantro sprigs, remove leaves and reserve for another use. Break sprigs in half and add to the pitcher. Pour in 2 quarts water and stir.   

Cover pitcher and refrigerate for at least 4 hours, at which time the flavors will begin to come through, or overnight, when the water will be infused with flavor. Water keeps for up to 3 days or as long as peaches appear fresh (peach-infused water will change color as it sits). Add more water to continue infusing if you’d like. Strain water if desired before serving.

Note: This recipe explains how to get the "scraps" from peaches, ginger and cilantro, though in reality, we know you’ll be doing the reverse: saving the trimmings when you prepare produce for summer salads and desserts.

COCONUT CHIA PUDDING

Ingredients:
2 tablespoons chia seeds
½ cup coconut milk, unsweetened
1 tablespoon coconut flakes, unsweetened
1/8 cup cinnamon
½ teaspoon vanilla extract
1 teaspoon maple syrup

Stir together chia seeds, coconut milk, coconut flakes, cinnamon, vanilla extract and maple syrup.  Cover and set aside for at least 10 minutes.

Top with ¼ cup of berries (strawberries, blueberries, raspberries or any other) and 2 table spoons of sliced almonds.
